Tomato Pesto Gnocchi Traybake

This Tomato Pesto Gnocchi Traybake is a simple yet flavorful vegan and gluten-free dish that's perfect for a nourishing meal. The combination of roasted cherry tomatoes, crispy gnocchi, and vibrant pesto creates a satisfyingly delicious traybake.

Ingredients:

  • 1 pack gluten-free gnocchi

  • 2 cups cherry tomatoes

  • 1/4 cup vegan pesto

  • 2 cloves garlic, minced

  • 2 tbsp olive oil

  • Salt and pepper, to taste

  • Fresh basil leaves, for garnish

Instructions:

Preheat the oven to 200C 400F


In a large baking tray, toss the gnocchi, cherry tomatoes, minced garlic, and olive oil until evenly coated


Spread the ingredients out in an even layer and season with salt and pepper


Bake in the preheated oven for 20-25 minutes, or until the tomatoes are blistered and the gnocchi is golden brown


Remove from the oven and drizzle with vegan pesto


Garnish with fresh basil leaves before serving
